I served up this recipe for grain free, gluten free gingerbread on Christmas morning. I was a little worried it wouldn’t get the Ooo’s and Aaah’s my usual holiday breakfast menu would. But I was wrong, they LOVED it!

1/4 tsp. Ginger Powder (I added a bit more)
Tip: have your eggs at room temperature before you start, that way when you mix with the coconut oil (melted), it won’t make it go solid again.
I mixed all of the liquid ingredients first, eggs, water, oil, vanilla extract, and also the dates in a food processor. If you don’t have one, you will want to soak the dates in warm water (or even heat at low temp for a few minutes) and then press into a paste.
Then add all of your dry ingredients.
I cooked mine at 350 degrees, for about 15 minutes, but you’ll want to check it after 10 minutes, it should bounce back when you gently push on it.
1/2 c Coconut oil or Organic Butter
1/4 c dates (made into a paste – can also substitute with honey)
2 Tbsp of Juice From An Orange
